Thanksgiving Leftovers What To Do With Them

Tonight we are having Turkey (chicken) nuggets for supper. When I was thinking of things to make with the left over turkey I thought of my homemade chicken nugget recipe. I thought why not use turkey instead of chicken I am sure that it will be fine, and it is. They taste so yummy and as Mommy I am happy to serve them to my kids as a healthy version of one of there favorite foods. When I found out how the store bought and McDonald's ones are made I swore that I would never let my kids eat that again, yuck!

  • 1 large egg
  • 1 large spoonful of mayo (homemade would be much better)
  • 2 cups of rotisserie chicken (or turkey)
  • 1/2 cup small onion
  • 1/4 -1/2 cup of shredded cheese (raw cheese would be best)
  • 3/4 cup of bread crumbs
  • salt and pepper to taste

Pulse chicken, onion, salt and pepper in a food processor until finely chopped. Add chicken mixture to egg and mayo and stir until combined. Add cheese and stir in. Shape into nuggets and roll in the bread crumbs. Bake for 18 minutes at 425 degrees. Turn half way through cooking time.
